Here’s a delicious recipe for Pyaaz Kachori:

Ingredients:

For the Dough:

  • 2 cups all-purpose flour (maida)
  • 1/2 tsp salt
  • 1/4 cup ghee or oil (for a flaky texture)
  • Water (as needed)

For the Onion Filling:

  • 2 large onions (finely chopped)
  • 1/2 cup gram flour (besan)
  • 2 green chilies (finely chopped)
  • 1/2 tsp cumin seeds
  • 1/2 tsp fennel seeds (saunf)
  • 1/2 tsp mustard seeds
  • 1/2 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp coriander powder
  • 1/4 tsp garam masala
  • Salt to taste
  • 2 tbsp fresh coriander leaves (finely chopped)
  • 2 tbsp oil (for frying the filling)

For Frying:

  • Oil (for deep frying)

Instructions:

Step 1: Prepare the Dough

  1. In a large mixing bowl, add all-purpose flour and salt.
  2. Add ghee or oil and mix well, rubbing the flour and ghee together to get a crumbly texture.
  3. Gradually add water and knead until you get a smooth, soft dough. Cover and let it rest for 15-20 minutes.

Step 2: Prepare the Onion Filling

  1. Heat 2 tbsp of oil in a pan. Add mustard seeds, cumin seeds, and fennel seeds. Let them splutter.
  2. Add the chopped green chilies and onions. Sauté the onions until they turn golden brown.
  3. Add gram flour (besan) and cook, stirring continuously until the raw smell of the besan disappears (around 3-4 minutes).
  4. Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
  5. Add chopped coriander leaves, stir to combine, and remove from heat. Allow the filling to cool.

Step 3: Shape the Kachoris

  1. Divide the dough and the onion filling into equal portions.
  2. Take a portion of the dough and roll it into a small disc. Place a portion of the filling in the center.
  3. Carefully bring the edges of the dough together to seal the filling, forming a ball again.
  4. Gently flatten it into a kachori (thick disc shape) without letting the filling spill out.

Step 4: Fry the Kachoris

  1. Heat oil in a deep frying pan over medium-low heat.
  2. Once the oil is hot, carefully slide in the kachoris and fry them on low to medium heat until they puff up and turn golden brown. Flip as needed to ensure even cooking.
  3. Remove and place on paper towels to drain excess oil.

Step 5: Serve

Serve hot with tamarind chutney, mint chutney, or a side of yogurt. Enjoy your crispy and flavorful Pyaaz Kachoris!
